Celiac Disease

Having discovered my own intolerance to Wheat and Gluten at the end of 2007 I have been aiming to create a series of lenses around the whole subject! The obvious place to start therefore is with An Overview of Celiac Disease or Coeliac Disease as it is termed in the UK.

In the last few years, publicity about celiac disease (coeliac disease) has increased, but many people don’t realize that those articles may apply directly to them. What used to be a little known, rarely tested for disease, has become more commonly diagnosed.

Celiac disease, which was once considered rare, is now known to effect 1 in every 133 people in the United States alone, most of which are undiagnosed.

Gluten Free Food Preparation

If you’ve recently been diagnosed with celiac or gluten intolerance, you may be wondering just how careful you have to be when preparing your food. You have probably been told that you not only need to verify that all of your food is gluten free, but that you need to replace certain pieces of cookware and food prep items, such as nonstick pans, wooden spoons and cutting boards.

You also probably have been told that you can’t use the some of the same items for gluten-containing food as you do with gluten-free food. Your first reaction is probably something like, “You’ve GOT to be kidding me. I was sick, but I wasn’t THAT sick. Some people may need to go to those extremes, but not me.” Read more at Gluten Free Food Preparation.
